HOW we make our Cherry Rum

Doundrins Distilling Cherry Rum starts by slowly fermenting a mix of molasses and cane sugar. Fermentation is done at ambient temperature, so depending on the time of year, this takes a varying duration of time. We typically average 4-6 weeks for fermentation of our rum, which is more akin to a "Caribbean-style" rum versus an "American-style" product. The longer duration of fermentation adds complexity in flavor to our rum. After fermentation, it goes through 2 distillation cycles: stripping and final distillation. After final distillation, tart cherry juice from our cherry farmer in Wisconsin is added to get the final product.

Hyline Orchard Farm Market Inc. was established in 1958 as a roadside stand just 2 miles north of downtown Egg Harbor. This family-owned business has flourished over generations into what it is today.
