Doundrins Honey Liqueur is a sweet honey-forward spirit that is made with local honey. The honey for our spirit comes from Gentle Breeze out of Mt Horeb, which is less than an hour from the distillery. It is one of our most versatile spirits. You can use it as the main spirit in a cocktail for something like our famous “O-face” which combines orange juice and heavy cream with our Honey Liqueur for a delightful cocktail that is good for any occasion. The Honey Liqueur can also be used to compliment any of our other spirits or ones you may have in your liquor cabinet at home. It adds a subtle sweetness and honey flavor that is sure to punch up your next craft creation. Or, simply savor its delicious flavor on the rocks.

TASTING NOTES


Doundrins Distilling Honey Liqueur starts off with honey fresh from a local apiary, Gentle Breeze Honey, that we get in 60 lb containers. The honey is then added to a neutral spirit at just the right amount to balance the sweetness and flavor of the honey. That is all! This spirit brings out the genuine flavor of the honey based on the seasonality of when it was harvested.

Gentle Breeze Honey
As with many other beekeeping operations, what is now a three-generation family business grew out of something that started as a personal hobby. After taking a beekeeping class through the University of Wisconsin–Madison in the mid-1960s, Eugene Woller became fascinated with the wonders of the beekeeping world. Eugene and his wife, Donna, soon started Gentle Breeze Honey on a modest, part-time basis with the purchase of seven hives from a retiring beekeeper.
Building upon the long-standing client relationships and extensive beekeeping wisdom developed by his father, Eugene, over more than five decades, Tim has strived to infuse new energy into the family enterprise, particularly in regard to disease management practices and maintaining robust bee health. This has entailed not only long hours of physically demanding work, but also the vital need for ongoing learning about how to best optimize all facets of the business.
